    Chocolate chip blondies (found on chocolate covered Kate blog)

    Genius Chocolate-Chip Blondies

    i like to make the kids some good snacks but don't like feeding them junk so I searched for something new to make for our camping trip and this is what I found. Just finished making it and wow, this is delicious! Hard to believe it was made with beans. First batch I made using flax meal. Tasted great but I do think the other kids camping might think they r too healthy so the 2nd batch I made using quick oats and am sure nobody will think that batch is healthy at all. Very excited for these to cool so we can do an official testing.

    (makes an 88 pan)

    1 1/2 cups chickpeas or white beans (1 can, drained and rinsed) (250g after draining)
    3/4 tsp baking powder
    1/8 tsp baking soda
    level 1/4 tsp salt
    3/4 cup brown sugar or coconut sugar (See note below, for substitutions)
    2 tsp vanilla extract
    1/4 cup ground flax or quick oats (20g)
    1/4 cup peanut butter (or other fat source) (see nutrition link below, for lower-cal options)
    optional: 1/2 cup chocolate chips (Not “optional” if you’re CCK!)

    Preheat oven to 350 degrees. Blend all ingredients (except chips) until very smooth in a good food processor (not a blender). Mix in chips, and scoop into a greased (or tinfoil-lined) 88 pan. Optional: for “prettiness” you can stick some chocolate chips on top of the batter as well. Bake for around 30 minutes. They’ll look a little undercooked when you take them out, but they firm up as they cool, and you don’t want them to get hard.

    Amazing! They do not look "healthy" at all! I love fake-out recipes.

    They don't taste it, in fact I was worried about the first batch having the flax meal and being too obvious but after baking it totally disappears. I have only used it in smoothies so had no idea. After baking the oat recipe I will let you know which turned out best but this tastes like a chocolate chip cookie almost. Mmmmmmmmmmmm

    I love that website!

    This recipe sounds interestingly good. The ingreds are all so healthy too, plus i have them all. Will definitely make these soon!

    I have to update.... This does NOT taste healthy in any way! I gave my sister a bite today and she was shocked. Totally passable to anyone who won't eat healthy and so good most wouldn't care that it is. I am dying to try her other recipes now!
