Low-Fat Beef and Bean Tortilla Bake
I found this recipe in a little Betty Crocker magazine called simple healthy meals. This recipe is so good because it is made with on hand ingredients so I use this as an easy, last minute idea when I cant think of anything to make for dinner. This dish is very healthy and doesn't taste like it is. I like to add a can of my favorite el pato tomato sauce (yellow can) to the meat mixture and also I just lay out the tortillas tearing them so they fit in the pan. the strips are extra work I don't think that is necessary. I like to serve this with a little bit of sour cream.
Ingredients:
1 lb extra lean ground beef
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can pinto beans, rinsed and drained
1 (14 1/2 ounce) can chopped tomatoes
1 (1 1/4 ounce) envelope taco seasoning mix
2/3 cup water
3/4 cup reduced-fat sharp cheddar cheese (3 oz.)
3 (8 inch) flour tortillas, cut in half, then crosswise into 1/2 inch strips
Directions:
1 Heat oven to 350 degrees. In 12 inch skillet, cook beef over medium heat 8-10 minutes, stirring occasionally, until brown; drain, stir in beans, tomatoes, seasoning mix and water. Cook 2-4 minutes. stirring occasionally, until heated through. Stir in 1/2 cup of cheese.
2 In an 8 inch square glass baking dish, spread 2 cups of beef mixture. Top with half of the tortilla strips. Spoon half of the remaining beef mixture over strips. Add remaining tortilla strips; top with remaining beef mixture.
3 Bake uncovered about 30 minutes, until bubbly and heated through. sprinkle with remaining cheese and bake 5 minutes longer, until cheese is melted.Last edited by cali~jenn; 04-14-2013 at 12:15 PM.

Made this Friday night and tried making it even healthier by adding a small white onion and 2 red bell peppers to the ground turkey after I browned it. Using 20 oz. of ground turkey the calorie count per serving (I used a 9x13 pan and got 12 servings out of it) came to 229 per serving according to myfitnesspal. I added a spoonful of plain Greek yogurt along with some cholula on top and Some chopped cilantro. Almost added corn but changed my mind. I know that would also be yummy tho.

My personal research and effective formula. Heat kitchen appliance to 350 degrees. Cook 2-4 minutes. stirring sometimes, till heated through. Stir in 1/2 cup of cheese.In AN eight in. sq. glass baking dish, unfold two cups of beef mixture.
