Low calorie/fat stuffed Green Peppers
my second twist on healthy comfort foods is Stuffed Green Peppers. I love them so much, but with the grounds beef, tomato sauces (added sugar) etc....I decided to twist it up a bit and this is what I came up with. The calorie count for the stuffed pepper is 233 on top of 1 cup of brown rice 508.
4 Fresh whole green peppers
1lb of ground turkey Breast
1 can of Margaret Holmes Hoppin Johns
Brown Rice
I browned the Ground turkey, once done mixed it with the Hoppin Johns.
Take your pepper, cut the top off and clean the inside seeds. Stuff at tight as you can with meat mixture. Bake in oven at 350 for about 45 mins.
while they are cooking, cook your brown rice as directed.
Once peppers are done, serve on top of rice. They will look real dry, but once you cut into them, they actually are very moist and form a gravy. I loved the way it came out, however Terri is a huge Hoppin Johns girl, so she said next time to add 2 cans. Of course it would most likely make 6 peppers.If at first you don't succeed, do it your wife's way!

That looks great! I've never heard of Margaret Holmes Hoppin Johns; i'm going have to check if i can find it locally. I love how you made it healthier with the brown rice too. Great recipe!
