    Seswaa (Stewed Beef of Botswana)

    1 tablespoon oil
    1 1/2 lbs stewing beef
    1 onion, peeled
    3 bay leaves
    salt
    fresh ground black pepper
    water

    Directions:

    Preheat oven to 300 degrees F.

    Cut beef into large chunks.

    Heat oil in an oven safe Dutch oven and brown beef; add whole onion, bay leaves, season with salt and pepper. Add enough water to cover meat, bring to a boil, then cover tightly and place in oven for 4 hours. Remove pot to the stovetop and cook, if needed, to boil off any water remaining.

    Shred meat and if desired, brown further.

    This is usually served with a porridge made from millet (pictured).
