Asparagus Frittata
Well the other day Bruce wanted to know what to cook for dinner.
We had some leftover cooked rice, and a lb of asparagus and some sliced mushrooms that needed to be used. So this is what I came up with and told him to make.
Chop and sauté
2 Chicken Breasts
1 lb Asparagus
1 Onion
8 oz Mushrooms
in a little butter and white wine
Mix in cooked rice (about 2 cups cooked) after veggies are sautéed and spoon all into a 9x13 baking dish coated with cooking spray.
Mix 6 eggs,
Half and half (about half a pint we had that needed used up)
1 cup shredded cheese we used a cheddar/monterey jack blend.
Salt, Pepper, Paprika, A little Emeril’s Kick it up sauce.
Add a little milk if this seems really thick.
Pour egg mixture over chicken veggie mixture and bake at 350 for 45 minutes
Top with more cheese and bake till cheese is bubbly.
Came out really scrumptious!

Never really had frittatas but the ingredients sound yummy.

A Frittata is just a fancy word for a casserole.
