    Buffalo chicken cupcakes

    Buffalo chicken cupcakes



    **WINNER** September 2013 Recipe of the Month!

    I found a recipe on Pinterest and changed it slightly .... it turned out SO good!!




    Ingredients

    4 boneless, skinless chicken thighs
    1 red onion
    2 tblspoons butter
    1 tablespoon EVOO
    1/2 cup favorite Buffalo sauce (I used Franks Buffalo hot sauce)
    4 oz cream cheese (I used a fat free one)
    12-14 tablespoons mozzarella cheese, shredded.
    1/4 - 1/2 cup blue cheese crumbles
    1 can of pizza dough (I used pillsbury)



    Directions

    1 Chop the chicken into cubes (approx 1/2") and chop up the onion.

    2 Melt butter and olive oil then add onion. Saute until transparent.

    3 Add chicken and cook.

    4 Once chicken is cooked add the hot sauce, and the cream cheese. Heat through, stirring occasionally, for approx 5 mins. Set aside.

    5 Preheat oven to 400f, and prepare a muffin tray by spraying each section with cooking spray.

    6 Open up the pizza dough and roll out flat. I used a coffee mug to loosely make circles, taking each circles and stretch it slightly and then put each circle in the bottom of each muffin tray section. My muffin tray has the usual 12 sections, but this usually has enough to make approx 12 to 14 portions. You want enough dough in each section so that it comes up the sides slightly. Don't worry about them remaining perfect circles!!

    7 Divide your buffalo chicken mixture between the 12 - 14 pizza dough portions. Now put approx 1 tablespoon of mozzarella cheese on top of each buffalo chicken cupcake (I didn't measure ... I just picked the cheese up and put some on top)

    8 Bake in the oven for 15-18 mins, or until the cheese is bubbling and the dough is lightly browned. As soon as they are out of the oven, sprinkle with the blue cheese crumbles. You can add as much or as little blue cheese as you want, depending on your taste.

    9 Remove the cupcakes and serve.


    I served these with a mixed green salad!!!!! But these would be good as an appetizer or something to serve at a party!!

    Who would've thought...a chicken cupcake! I love these kinds of recipes...sounds fun to make and you can eat it on the go. Sounds great!
