Meatloaf and eggs
My mom used to make her meatloaf this same way---adding hardboiled eggs in the center of the meatloaf and baking it this way. I loved how the meatloaf looked when you sliced it down the middle...with a cross section of egg peeking out. So yesterday I too made a meatloaf with hardboiled eggs cooked in it. The recipe comes from the mostly-Paleo site, Everyday Maven dot com.
One recommendation I would make is to not use lean ground beef for your meatloaf and stick with the usual 80% lean, 20% fat. I mistakenly used a leaner beef and thus, the meatloaf was a tad dry. Leaving the fat in there will only add to its juiciness and flavor.
Other than that, I loved this meatloaf; super tasty and hearty!
