Pan seared Tbone steak with mustard potatoes
On the menu today: Pan seared Tbone steak with mustard potatoes
For the Steak
T-bone steak
salt
freshly ground black pepper
a little thyme
1 tablespoon olive oil
1. Heat a large pan over high heat.
2. Pat steak dry and season generously with thyme ,salt and pepper.
3. Add oil to hot skillet and when it begins to smoke add steak.
4. Reduce heat slightly and cook steak until browned, about 4 minutes on each side.
5. Transfer skillet to the oven preheated to 180c Roast about 6 to 8 minutes.
6. Transfer steak to a cutting board and let it rest for 10 minutes.
For mustard potatoes
1kg (more or less depends how much you need) small/baby potatoes
2 spring onions thinly sliced, greens reserved
1 tbsp oil
20 slices bacon chopped into a small pieces
2 tsp white wine vinegar
2 tbsp english mustard
1 tsp. dijon mustard
Half onion chopped in small pieces
1. Cut the potatoes in half Cook the potatoes with skin in NOT salted water till cooked
2. Heat oil in a pan and cook the bacon until crisp. (Set aside)
3. In the same pan, fry onions until they are soft and golden
4. Add the vinegar and mustard and then the potatoes and bacon and mix together.
5. Just before serving add chopped spring onionP Robins Photography
