Baby Back Ribs
5 lbs. baby back ribs
2 green bell peppers thinly sliced
2 yellow bell peppers thinly sliced
2 red bell peppers thinly sliced
2 onions thinly slices
6 garlic cloves finely chopped
2 jalapeno peppers, seeds removed, finely chopped
favorite meat rub seasoning
Season ribs with rub, salt, pepper. Rub chopped garlic and jalapeno peppers onto ribs. Layer sliced peppers & onion on top of ribs. Wrap each slab of ribs in extra heavy duty foil and place in refrigerator for 24-48 hours.
Before cooking let ribs come to room temperature (about 1 hour).
Bake in 300 degree oven for 6 to 8 hours.
