    Baked Chicken with Mushrooms and Wine

    **WINNER** December 2012 Recipe of the Month!


    1 cut up bone in skin on chicken
    6 T butter
    2T flour
    3/4 cup chicken broth
    1/2 cup blush wine
    1/4 cup green onion
    1 lb fresh mushrooms sliced and sauteed in butter with minced garlic

    Flour chicken. Melt 4 T butter in glass baking dish. Put chicken in skin side down.
    Bake 45 min at 350.

    Melt 2 T butter, stir in 2 T flour (left from flouring chicken)
    Add chicken broth and wine. Stir until thick and smooth

    Turn over chicken, pour on sauce and put green onion and mushrooms on chicken

    Reduce oven temp to 325. Bake 25 - 30 minutes more.

    What is Blush wine is it a sparkling white? I went to the bottle shop and couldn't find anything that said Blush.

    Made this tonight, YUM! I just used dry white wine (whatever I usually use for cooking) and doubled since I used a family size package of chicken thighs. I think I could make it healthier and almost as yummy by using boneless skinless thighs. (or even just skinless but hubby hates bone in) this turned out so good!i added garlic, salt and pepper also,really you could add whatever spices you want. The base recipe of this is awesome and I served it with mashed potatoes. (using the juice as a gravy almost) my pics aren't too exciting so if anyone makes it please take better ones. This is what I have for now tho, thanks for the recipe Alice!

    I made this for dinner tonight. Only I didn't have green onion, so as I am prone to do I improvised a bit, I added a tsp of lemon pepper seasoning to the flour..used chardonnay for the wine and saute'd yellow onion mushrooms and chives in some butter and chardonnay first then added the sauce and cooked a bit longer to reduce and then poured over the chicken.



    I made rice seasoned with some lemon pepper and using the rest of the chicken broth instead of water. And served steamed broccoli and cauliflower with it.
