Fluffy Meatloaf
***RECIPE OF THE MONTH WINNER APRIL 2013!!***
Fluffy Meatloaf
1 egg beaten
1 cup milk
3 slices bread torn into smallish chunks
1 1/2 lbs. ground beef
1/4 cup minced onion
1 1/4 tsp salt
1 tbsp Worchester sauce
1 tbsp ketchup
1/4 tsp each garlic salt, celery salt, pepper
1 tbsp horseradish
Mix egg and milk together, add bread and blend enough so bread is fairly smooth. (I use a high speed stick blender for this so there aren't any bread lumps)
Add rest of ingredients to meat and blend together with egg, milk, bread mixture.
shape into loaf and bake @ 350 degrees in a shallow baking pan 1 1/2 hour until done.
Topping
3 tbsp brown sugar
1/4 cup ketchup
1 tsp dry mustard
sprinkle of nutmeg
blend and spread on loaf one hour into baking time.

I always prior to getting this recipe used the meatloaf recipe on the back of the oatmeal box. My son did not like meatloaf. Then one evening a dear lady from our church invited us to dinner (Ruth). To my son's credit (he was about 14 at the time) when he found out we were having meatloaf he didn't say a word, he just tried it. (That made me very proud that he did mind his manners sometimes) Anyway, he found out he LOVED meatloaf made this way, and I haven't made it any other way since! It's so much better than the oatmeal type.
With just Bruce and me now, I usually double this recipe and make three smaller loaves. We eat one for dinner and then freeze the other two for fast dinners a couple other times.

How excited that tonight I actually had what I needed on hand to try this out. Cant wait till it is finished cooking! Will post tomorrow how much I love it.

Ok I made this last night and it turned out yummy! The topping is really good although I think I may prefer reg ol ketchup. Hubby on the other hand liked it exactly as is and my 2 year old grubbed every bite without me even having to try to get her to eat.
So easy I will make it this way from now on.

I made this last night too and Dave and I both agree, hands down best meatloaf we have ever had! Delicious!

Bruce especially loves the topping and a lot of it. I usually make double and bake the extra in an oven proof bowl at the same time I put it on the meatloaf.

Oh I LOVED the topping also. In fact we had leftovers tonight and I found myself licking my fingers as I cut them and scooping all the drips that fell off to put on top. After a 2nd night of it I think I may like the topping this way better than ketchup. It is just something to get used to when all I have ever had was ketchup before this. This topping could be used for so much more!

I tried this tonight, after many years of being (I think) a very good cook, I could not master a meatloaf. This not only turned out perfect, it is AWESOME!! Thanks Lari!!

Made my first ever meatloaf yesterday ....... and used this recipe!! For some reason I was convinced that the hubby hated meatloaf and then was told that was not the case!!
This turned out really well ... especially the topping, loved that!!!
