Pastichio With Crema Sauce
A Greek friend of mine made this for me once and OH MY GAWD it is GOOD!!! Definitely not a healthy weeknight meal but a great splurge on the weekend or when you have guests. Actually am making this tonight and I cannot wait!
2 lbs. ground beef
2 tsp. salt
1/4 tsp. pepper
1 onion, chopped
4 Tbsp. butter + 1/2 Cup butter
1/2 Cup tomato sauce
1/2 Cup water
1 lb. rigatoni or other large round pasta
4 Cups grated romano cheese
1/2 Cup butter
4 Cups milk
4-6 egg yolks
Brown beef with salt and pepper then add in onion, parsley and 4 Tbsp butter, brown well. Add in a good amount of the greek seasoning. (to taste) it has a great flavor so keep adding until you can really taste it. Add tomato sauce and water and simmer about 15 minutes till liquid is absorbed.
Cook pasta in salt water for about 10 minutes, do not overcook. Drain well. Grease 11"x14" baking pan with butter then sprinkle with bread crumbs and some cheese.
Combine pasta with 1/2 Cup melted butter, arrange 1/2 of mixture in pan. Sprinkle with grated cheese and cover with meat mixture. Cover with remaining pasta and grated cheese. Prepare crema.
Melt butter, add flour and stir till slightly brown. Add milk gradually, stirring constantly until slightly thickened. Slowly add slightly beaten egg yolks and cook over low heat until thickened. Season with salt and pepper to taste. (I like a little nutmeg also)
Spread crema evenly over pasta, sprinkle with rest of cheese and bake at 350* for about 50 minutes. (cream sauce should be thick enough to form a top layer. Thin sauce will seep through the pasta.) Makes 15 servings, freezes well.
