Lite Pasta Alfredo
with chicken, kielbasa & a cajun kick
This dish~loaded with vegetables, chicken and kielbasa~wont leave you hungry. If you want more spicy flavor, up the cajun seasoning to taste. This isnt a spicy recipe as it at all but it is very healthy and very delish.
Ingredients
8oz. dry farfalle pasta
1 can evaporated milk
1/2 cup grated parmesan cheese
2 egg yolk
3 tsp. cajun seasoning
1 lb. boneless skinless chicken breast, cut into strips or chunks
1 tsp. olive oil
16 oz. turkey kielbasa, sliced into moon shapes
4 cups sliced mushrooms
1 onion chopped
1 red bell pepper chopped
4 cloves minced garlic
1/2 cup reserved pasta water
1 cup frozen peas (I do not add these since I cannot stand them, lol)
salt to taste
sliced scallions
parmesan cheese shavings
Directions
Boil the pasta per directions and drain, saving 1/2 cup of the water.
Whisk together evaporated milk, parm and the egg yolks for the sauce and set aside.
Sprinkle the chicken with the cajun seasoning and brown it up in a large sautee pan over med-high heat until meat is fully cooked. (about 4 minutes depending on how big the pieces are)
Stir in kielbasa, mushrooms, onion, bell pepper and garlic. Cook until kielbasa browns until most water is cooked out from the mushrooms.
Add chicken, pasta and peas along with the alfredo sauce and some of the starchy water. Stir until it becomes kinda thickened adding water as you think necessary.
Season dish with salt, garnish with scallions and parm shavings.Last edited by LariP; 01-19-2013 at 07:26 PM.
