Super easy Jambalaya
2 boneless, skinless chicken thighs or breasts, diced
1 Tb cajun seasoning
2 Tb olive oil
1/4 cup chopped onion
1/4 cup chopped green bell pepper
1/4 cup chopped celery
2 Tb chopped garlic
1/2 cup chopped tomatoes
1 tsp. Worcestershire sauce
1 tsp. hot sauce
3/4 cup rice
3 cups chicken stock
5 ounces Andouille sausage, sliced
salt and pepper to taste
Toss chicken with cajun seasoning and set aside. In a large saucepan, heat oil over high with onion, pepper, and celery, about 3 minutes. Add garlic, tomatoes, Worcestershire and hot sauce. Stir in rice and slowly add broth. Reduce heat to medium and cook until rice absorbs liquid and is tender, stirring occasionally, about 15 min. When rice is just about ready, add chicken mixture and sausage. Cook until meat is done, 10-15 minutes more. Season to taste with salt, pepper, more cajun seasoning or more hot sauce.
*I made this recently with boneless skinless chicken thighs already grilled with cajun seasonings, leftover summer sausage, and a bunch of veggies from the farmer's market.....it was so good. I doubled the recipe and we had leftovers the next day that were even better!Last edited by LariP; 01-19-2013 at 07:43 PM.

Im making it now xx i skipped sausages -as my husband is wierd
and does not know what good food should taste like x
