    Muffulettas




    1/4 cup red wine vinegar
    2 garlic cloves peeled and minced
    1 t. dried oregano
    1/3 cup olive oil
    10 lg. pitted green olives, chopped
    1/3 cup pitted, chopped kalamata olives
    1/4 cup roasted red bell peppers
    salt and ground black pepper
    1 baguette
    4 oz. thinly sliced ham
    4 oz. thinly sliced turkey
    4 oz. thinly sliced salami
    4 oz. sliced provolone
    4 oz. sliced Swiss cheese
    1/2 red onion thinly sliced
    lettuce or arugula leaves.

    Whisk the first 3 ingredients, gradually blend in oil. Stir in olives and roasted peppers. Season to taste with salt and pepper. Slice bread lengthwise. Spread some of olive, red pepper mix on bread bottom then layer meats and cheeses. top with onion and arugula. Spread the remaining olive and roasted pepper mix on top of the sandwich and cover with bread top. You can serve immediately or you can wrap the entire sandwich tightly in plastic wrap and refrigerate a day before serving.

    Great sounding sandwich recipe, Alice. The muffaletta is a New Orleans dish, isn't it? this sounds like it has a lot of flavor.
