Simply Lasagne
Prep - 20mins
Total - 1 hour 35 mins
1 lb ground beef
2 1/2 cups shredded mozzarella cheese
1 container (15oz) part skimmed ricotta cheese
1/2 cup grated parmesan cheese, divided in half
1/4 cup chopped fresh parsley
1 egg, lightly beaten
1 jar (26oz) spaghetti sauce e.g.ragu etc
1 cup water
12 lasagne sheets, uncooked
1 Preheat oven to 350f. Brown meat in large skillet/fryingpan on medium high heat.
2 Meanwhile, mix 1 1/4 cups of the mozzarella cheese, ricotta cheese, 1/4 cup parmesan, parsley and egg until well blended, set aside.
3 Drain meat and return to pan. Stir in spaghetti sauce. Pour water into empty sauce jar, cover and shake well. Add to pan, stir until well blended. Adding water to the sauce helps cook traditional noodles during baking, so you don't have to cook them beforehand.
4 Spread 1 cup of the meat sauce into the bottom of a 13 x 9 inch baking dish. Top with a layer of 3 uncooked lasagne sheets. Sheets will expand to fit the dish during baking.
5 Spread 1/3 of the ricotta cheese mix and 1 cup of the meat sauce over lasagne. Repeat layers two more times. Top with remaining three lasagne sheets and the remaining meat sauce.
6 Sprinkle with remaining 1 1/4 cups mozzarella, and remaining 1/4 cup parmesan. Cover tightly with greased foil and bake for 45 mins. Remove foil and continue baking 15 mins, or until heated through. Let stand for 15 mins before cutting to serve.
