    Meatloaf or burgers



    I love this meatloaf recipe because you can make extra, form them into patties, and freeze them for another dinner.

    1 1/2 cups quick cooking rolled oats
    2 tsp dried basil or oregano
    1 tsp salt
    1/2 tsp pepper
    4 eggs
    1 1/2 cups milk
    1/3 cup ketchup
    1 Tbsp yellow or Dijon mustard
    3 lbs lean ground beef

    1. Preheat oven to 350 degrees F

    2. In a large bowl , using a fork, combine oats, basil, salt pepper, and eggs; stir in milk, ketchup, and mustard. Let stand for 5 min. Add ground beef and blend gently with fork until incorporated ( do not over mix).

    3. Divide mixture in half and and pack one half into a 9x5 - inch metal loaf pan; flatten tops. Take the second half of the mixture, and form into patties and freeze for an other nights' dinner.

    4. Bake for 1 hour. Carefully pour off any excess liquid. Let stand for 10 min. Cut loaf into slices and serve hot.

    You can also use a combination of beef and veal, or beef and pork.
