Stuffed Zucchini
Okay, this is perfect for you gardeners who grow your own! It really calls for a real big zucchini, better for stuffing, however any size will work.
4-6 zucchini, halved lengthwise
1lb sweet Italian sausage- removed from casing
1med onion, minced
1/2tea basil
1/2 tea oregano
1/4lbs Mozzarella cheese, chunked
1/3 C Bread crumbs
1/4 tea salt, dash of pepper
2 cans (15oz) Spaghetti sauce w/meat
Scoop out inside of zucchini, leaving 1/4 inch shell. Par Boil shells for 6-8 mins. Drain well.
Chop insides of zucchini, fry sausage until thoroughly cooked, add onion and chopped portion of zucchini. Cook until the vegetable turn clear and are tender. Drain off the excess fat and juice. Add the basil, oregano, mozzarella, bread crumbs, salt and pepprer, mix will. Stuff the shells with meat mixture, place in 9x13 baking dish, drizzle on can of sauce over the zucchini stuffed shells. Bake 375 for 20-25 mins. Serve over spaghetti noodles.Last edited by LariP; 01-19-2013 at 06:56 PM.

So awesome, so I am at work today and a patient brings in his newly harvested Zucchini from his garden.....bam, online to get my recipe and stop by the store on the way home. I love this site. Permanent placement for my favs.

Never had stuffed zucchini but it sounds good. Starting my grocery list for the week and this just may be on it.
