Mustard, Sage, and Maple Glazed Pork Roast
Ingredients:
1 tablespoon olive oil
1 onion, diced (about 1 cup)
1 garlic clove, minced
1/2 cup Dijon mustard
1/2 cup pure maple syrup
1/3 cup coarsely chopped
1 tablespoon soy sauce
kosher salt
fresh ground black pepper
5 1/2 pound center-cut pork loin roast (six bones)
Instructions:
Heat oil in a medium skillet over medium heat; add onion and garlic and cook, stirring frequently, until the onion begins to soften, about 5 minutes.Transfer to a food processor, but let cool to room temperature. Add sage, mustard, maple syrup, soy sauce, 1/4 teaspoon salt, and a pinch of black pepper. Puree until smooth.
Preheat the oven to 425 degrees F. Let the roast rest at room temperature while the oven is heating.
Season the meat all over, generously with salt and pepper. Place the roast, bones down in a roasting pan and roast to an internal temperature of 115 degrees F, about 50 to 60 minutes. Remove the roast from the oven and let rest 20 minutes before the next step.
Cover the roast evenly with the mustard glaze, then return it to the oven. Roast the pork to an internal temperature of 140 degrees F, about 30 minutes.
Let the pork rest for 20 minutes before carving. Slice the pork between the bones into chops.
