Sweet Potato Casserole with Macadamia Nuts
1 Stick Salted Butter
2 29oz. Cans of Princella Sweet Potatoes (NOT drained)
1/2 cup Honey
1/4 cup Dark Brown Sugar
1/4 cup Maple Syrup
1/2 cup Semi Crushed Macadamia Nuts (or keep whole)
1-2 cups miniature marshmallows
In a non stick skillet, heat butter with 2 cans of sweet potatoes. Add 1/2 cup honey. Cook on low until it loses some of it's runny consistency (about an hour). Add d. brown sugar and syrup. You can mix the nuts in or sprinkle on top.
Mix well and it should not be thin in consistency, should have some amount of stiffness and consistency to it.
Move to a oven safe casserole dish. Top with Marshmallows and broil for just a few minutes until the marshmallows look lightly toasted.
The sweet almost dessert-like dish goes so well with the turkey, stuffing and green beans.
