    Apple Cranberry Pie

    This is so great and a different twist on Thanksgiving or Christmas pies.

    you can use this recipe for the crust or used a pre-formed pie crust from the grocery store for a quicker time

    2C flour, plus extra for rolling
    1/2C finely ground blanched almonds or almond flour
    16T (2sticks) unsalted butter, very cold, cut into 1/2 inch cubes
    1t salt
    1heaping teaspoon brown sugar
    3 to 6 T nonfat milk, very cold

    1C dried cranberries
    2/3C sugar
    3T all purpose flour
    1/4t ground allspice
    2 1/4 lbs of 1/4 in thick slices of an assortment of good cooking apples such as Granny Smith, Pippin, Golden Delicious
    1 1/2T brandy
    1t vanilla extract

    egg wash
    1 large egg yolk
    1T whipping cream

    In a food processor, combine flour, almonds, salt and brown sugar, pulse to mix. Add butter and pulse 6-8 times, until mixture resembles coarse meal, with pea size pieces of butter. Add water 1 T at a time, pulsing until mixture just begins to clump together. If you pinch some f the crumble dough and it holds together, it is ready, if not, add a little more water and pulse again.

    remove dough from machine and place on clean surface, shape into 2 discs, do not over knead the dough. you should still see little bits of butter in the dough. wrap each disc in plastic wrap and place in frig for at least an hour.

    Combine cranberries, sugar, flour and allspice in large bowl. Mix in apples then add brandy and vanilla.

    Remove one crust let sit at room temp for 5-10 minutes. Sprinkle some flour on the disc and roll out to a 12 in circle, about 1/8 of an inch, transfer to pie plate.

    spoon in apple filling, mounding slightly in center.

    roll out second dough disk and cover pie, pinching top and bottom edges together to seal. cut slits in the top to release steam.
    I will actually cut out small shapes, such as stars (for Christmas) or leaves (for Thanksgiving) from the center area of the crust and then with the cut out shapes, attach back on the crust with just a dab of water "glue". This makes a great design for the holidays.

    Stir yolks and cream in bowl, brush over top of pie

    on middle rack, bake at 375 degrees for 50-65 mins. take out and place on cooling rack for about an hour. Serve warm or room temperature.
