Compote refers to fruit stewed in syrup. In this case that syrup is maple. Cranberries are great because they are very healthy since they have virtually zero fat, they are low carb, high in vitamins C and K. They are also good sources of manganese and dietary fiber. But more important, they taste good when prepare this way!
Cranberry Compote


  • 1/2 shallot, minced
  • 1 tablespoon butter
  • 1 cup fresh or frozen cranberries
  • 2/3 cup maple syrup
  • 2/3 cup apple cider
  • 1/4 teaspoon kosher salt
  • freshly ground black pepper

Melt butter in a saucepan over low heat. Add shallots and sweat until they begin to soften, about 10 minutes.

Stir in remaining ingredients and let simmer, uncovered, until reduced to about 1 1/2 cups.

If you like, you can pass the mixture through a food mill, but I like it the way it is.

Serve warm or room temperature. Store in the refrigerator.
