Came across this one and had to try it. Made a couple changes so will put in parenthesis next to list of ingredients any changes I made.

Easy, delicious lasagna that is made in one pan: the skillet! Plus, it only has 7 Weight Watchers points!

1- Tablespoon Extra Virgin Olive Oil
1 whole Large Onion
2 cloves Garlic, Minced (4)
1 cup Mushrooms
28 ounces, Diced Italian Tomatoes, Drained
cups Tomato Sauce (14.5 oz. can)
3 whole Basil Leaves, Chopped (5)
1 teaspoon Sea Salt
teaspoons Black Pepper
6 ounces, Lasagna Noodles, Broken Into Thirds And Cooked (whole wheat)
cups Ricotta Cheese (low-fat cottage cheese)
cups Shredded Mozzarella
3 Tablespoons Parmesan Cheese
2 Tablespoons Parsley

(I also added in crushed red pepper and my own Italian seasonings to taste, marjoram, oregano, dried basil)

Preparation Instructions
Heat oil in a large nonstick skillet over medium-high heat. Add onions and cook until softened, about 4 minutes. Add garlic and mushrooms and cook until garlic is fragrant, about 1 minute. Add in diced tomatoes, tomato sauce, basil, salt and pepper. Cook mixture until it thickens up a bit, around 5 minutes.
Add noodles to skillet and stir into the mixture well. Add scoops of ricotta cheese over the noodles. Add in mozzarella and Parmesan. Stir in parsley.
Cook about 2 more minutes, or until mixture is thick. Serve immediately with additional basil or parsley.
