Tomato Basil Pasta with Italian Sausage!
I found this dish on Facebook and tried it last night making a few changes to it. I can’t say enough how easy and yummy it is!
Tomato Basil Pasta with Italian Sausage!
No Straining - just stirring and simple to make.
Throw it all in the pot, INCLUDING the uncooked Pasta, and cook! Bring it to a boil, and then reduce to a simmer. The starch leaches out of the pasta and makes a rich, warm sauce for the noodles. The other ingredients cook right along with the pasta.
Ingredients
- 12 ounces pasta (I used Linguine)
- 3 Italian Sausage links (optional)
- 1 jar of Roasted Red Peppers, drained (optional)
- 1 can (15 ounces) diced tomatoes with liquid (I used Fire Roasted flavor)
- 1 large sweet onion cut in julienne strips
- 4 cloves garlic, thinly sliced
- 1/2 teaspoon red pepper flakes
- 2 teaspoons dried oregano leaves
- 2 large sprigs basil, chopped
- 4 1/2 cups vegetable broth (regular broth and NOT low sodium) (I used Beef broth)
- 2 tablespoons extra virgin olive oil
- Parmesan cheese for garnish
Directions
If you’re adding the Italian Sausage, sear it in the same pan first using a tablespoon of olive oil. Then in the same pan cut each sausage into 1/2 -1” slices.
Place pasta, tomatoes, onion, garlic, and basil over the sausage in a large stock pot. Pour in vegetable broth.
Sprinkle on top the pepper flakes and oregano. Drizzle top with oil.
Cover pot and bring to a boil. Reduce to a low simmer and keep covered and cook for about 10 minutes, stirring every 2 minutes or so. Cook until almost all liquid has evaporated (about 30 minutes). I left approx. 1.5 inches of liquid in the bottom of the pot – but you can reduce as desired. The sauce is yummy and will be needed for any leftovers.
Season to taste with salt and pepper. Stir pasta several times to distribute the liquid at the bottom of the pot. Serve garnished with Parmesan cheese.
Makes approximate 6 healthy sized servings.

Wow! That is VERY interesting! Have never seen a pasta dish made this way.

It was really yummy. The sausage completed it. I look forward to making it again, soon!
The sausage I used was Canino's Mild Italian Sausage. It's a local place that sells it at Sam's.
