White Bean, Pancetta, and Tortellini Soup
Got this recipe out of my "everyday pasta" cookbook by Giada De Laurentiis. Made it the other night for the first time and it was yummy so I thought I would share.
3 Tbsp olive oil
4 oz. pancetta chopped
3 lg shallots
1 carrot peeled and chopped
2 garlic cloves chopped
1-15 oz. cannellini beans, rinsed and drained
1 bunch swiss chard
6 Cups chicken broth
1-9 Oz. package cheese tortellini (fresh or frozen)
1/4 tsp fresh black pepper
In a large, heavy soup pot, heat olive oil over med high heat. Add pancetta, shallots, carrot and garlic and cook until pancetta is crisp.(about 5 minutes) Add the beans, swiss chard and broth.
Bring soup to a boil over med-high heat, then reduce to simmer. Add tortellini and cook for 5 minutes for fresh and 8 for frozen. Season with pepper and serve.
*I also had mushrooms in the fridge so I added them in while sauteing up the other stuff.
