Pasta Carbonara
I have been wanting to make this dish for the longest time. Today seemed like the perfect day to cook this since it's been so chilly outside and pasta carbonara is such a great comfort food for a winter's day.
The recipe comes from Mark Bittman's book, How to Cook Everything. It's a straightforward, simple dish without any fancy ingredients. The finished product is hearty, a little indulgent, and so deliciously mouth-watering.
Ingredients:
1 pound linguine or other long pasta
1 tablespoon EVOO
4 oz minced bacon
1 cup grated Parmesan cheese
2 eggs
Sea salt and pepper to taste
Directions:
In a medium saucepan sauté the olive oil and bacon until the bacon is crispy.
Boil a large pot of salted water; add the linguine to the water and cook the spaghetti until al dente, about 8-9 minutes.
While spaghetti is boiling, mix the parmesan cheese and the eggs in a large bowl.
After the spaghetti is cooked, drain in a colander and then immediately add the spaghetti to the parmesan-egg mixture. Combine well. Add the bacon and the leftover grease to the spaghetti mixture. Add freshly ground pepper and salt to taste. Eat immediately and enjoy!

Try this recipe - Pasta Sauce
One of my favourite recipe!)
INGREDIENTS:
- 1 medium brown onion
- 1 – 2 cloves of garlic
- 2 – 3 sticks celery
- 1 large carrot
- 1 large or 2 small zucchini
- half a small capsicum. Green or red is fine.
- 1 bottle store-bought passata sauce.
- olive oil for cooking
