    Portabello Mushrooms Stuffed with Italian Sausage

    I guess this is an olive garden recipe although I have never had it there. Randomly came across this recipe and decided to try it. Usually I dont like stuffed mushrooms cuz the breading seems soggy or something but these are GOOD! I used Italian bread crumbs and 1/2 & 1/2 for the cream since that's what I had on hand. I also added mozzarella cheese on top right at the end to melt over the mushrooms. You could even make more of the sauce cuz it was really good. Made mine on the bbq with indirect heat (side burners on high), cooked them perfectly.

    Portabello Mushrooms Stuffed with Italian Sausage


    4 large portabello mushrooms, with stems removed
    1 lb bulk Italian sausage
    1 teaspoon chopped fresh Italian parsley
    1 teaspoon chopped fresh basil
    1 chopped garlic clove
    1 cup garlic-flavored croutons, Ground Fine
    1/4 cup milk
    1/4 cup parmesan cheese
    2 eggs

    1 pint heavy cream
    2 tablespoons chopped fresh basil
    1/4 cup grated parmesan cheese
    salt (to taste)
    pepper (to taste)

    2 Brown the sausage in a nonstick skillet making sure sausage is crumbled into small pieces.
    3 Once browned drain fat and transfer to a paper towel to cool.
    4 In a medium bowl, beat the eggs with milk and then mix in the parsley, basil, garlic, croutons, and Parmesan cheese.
    5 Add the cooled sausage and mix well (mixture should be wet but firm and hold together easily).
    6 Top portobello mushrooms with sausage mixture and bake in 350 degree F oven for 15 to 20 minutes.

    7 SAUCE:.
    8 In sauce pan, heat cream and lightly boil until it is half its original volume being careful not to scorch it.
    9 Once it is reduced by half, mix in the Parmesan cheese, basil, salt and pepper.
    10 Spoon 2 ounces of sauce over top of each mushroom.
    11 Garnish with a sprig of fresh Italian Parsley or Fresh Basil.

    Very easy. Brown sausage and mke the sauce at the same time. And sadly I have forgotten about this o now this is on my to o list as well. Lol

    I'm so looking forward to making this for my husband when I get back home (only 5 more weeks). He loves mushrooms. I usually make the little stuffed mushrooms that you can get as appetizers in restaurants, but this is going to be so much better. Thank you for the recipe.
