Alfredo Pasta Olive Garden Clone
Tastes just like the Alfredo sauce from Olive Garden!
½ cup (1 stick) butter
2 cloves garlic, minced
2 cups heavy cream (about a pint), but measure closely and eyeball it!
½ tsp ground black pepper
pinch of salt
½ cup grated fresh parmesan cheese
2 9 oz packages of fresh fettuccine pasta
1 Fill large pot with 4 quarts of water and place over high heat to bring to a boil.
2 Melt butter in a medium saucepan over medium-low heat. Do not burn butter, stir until melted.
3 Add the garlic, cream, pepper and salt and bring mixture to a simmer. Turn the heat down if the mixture reaches a rapid boil or it could boil over! You just want a simmer!!
4 Add the cheese, and continue to simmer sauce for 8 minutes or until thickened,
5 While the sauce cooks, stir it frequently. Watch that it does not get too hot--- simmer only! Keep a close eye on your sauce and keep giving it a slow whisk while you proceed to step 6.
6 Add your pasta to your large pot of boiling water. If not boiling yet, wait until it is!) Follow package instructions on how long to cook your fresh pasta, usually only a few minutes. Test by running cool water over a piece of pasta and taste to see if cooked to desired texture. Drain pasta when done. Return to pot, add a dash of olive oil to keep it from sticking together and toss.
7 Hopefully you have been stirring your Alfredo sauce frequently during the pasta making, and you have kept it on a simmer only. If you cranked up the heat, it could break--- and now you have a not-so-creamy, curdled Alfredo!
8 Spoon pasta onto serving plates and cover with Alfredo sauce poured over the top.Last edited by LariP; 01-21-2013 at 03:57 PM.
