    quick and easy chicken quesadilla




    1 package oscar mayer deli fresh southwest seasoned chicken breasts. You can usually find this by the hot dogs/ deli meat
    1 can rotel mild diced chilies and tomatoes
    8 flour tortilla
    butter/margarine/ pam
    1 package of your favorite shredded cheese
    sour cream
    salsa

    Directions
    shred chicken or put into a food processor (you can use it whole too but my kids prefer it shredded)

    drain liquid from chilies/tomatoes

    add half the can to chicken and mix

    layer cheese and chicken mixture on a tortilla top with a little more cheese and another tortilla

    use butter or non stick spray in skillet and brown tortillas on medium heat until cheese is melted and they are slightly brown.
    If they fall apart when flipping cook slightly longer to make sure the cheese has melted or add more cheese to the tortillas before cooking to seal them together

    cut into 4 pieces and serve with salsa and sour cream.

    Edt for thumbnail: Half the battle of getting picky kids to eat is making it fun. I sure thought this one was a fun idea for presentation.

    I was totally against precooked chicken at first , but it took over an hour to make before and this stuff is actually really good =)

    I like Mexican food very much. This seems can be easily make by the quesadilla maker, I think I will get more vegetables than meat
