Avoid Soggy Chicken
Wasn't sure how to title this post so that's the best I could come up with!
This is in regards to slow cooking a whole chicken in what else, the slow cooker! I used to just put the entire chicken in the bottom of the pot only to find my chicken swimming in its own broth and juices 8 hours later. I'd have to be fishing for bits of meat here and there that were floating around and the chicken got a little on the soggy side sitting in its own juices for so long. Well, read about this trick to avoid getting soggy chicken in the slow cooker: Take some aluminum foil and make them into 4 "tennis ball" shapes. Place the foil balls underneath the chicken, creating a "stand" inside the slow cooker. Then just cook as you would normally do. This produces a beautifully cooked whole chicken that is still juicy but not a soggy mess!

put a metal cooking rack into your baking pan so that the chicken doesn't sit in any liquid while baking. flip it over when it's about 3/4 done to allow the down side to brown a little. you can broil both sides for a couple of minutes each if you like, but you have to keep an eye on it.
