STEAM EGG
A. STEAM EGG
Dish for 2 people, cooking time around 5 to 6 mins
MATERIALS:
3 to 4 eggs
Around 120 to 150ml of boiled cool water
Few salt, oil and sauce
STEP:
1) Prepare 3 to 4 eggs (unfreeze first);
2) Wash watts dish, then wipe off with dishcloth;
3) Stir eggs in the watts dish;
4) Stir after seasoning egg pulp with little salt and adding around 120 to 150ml boiled cool water. Last adding little oil on egg pulp. Marinating for at least 15 mins;
5) Simmer to boil water in the wok first. If using electric steamer, adjust firepower to 6 (total 10) to boil;
6) Before put the prepared egg pulp to steam, wipe off the inner of steamer and the underneath of cover;
7) Cover the wok, let the egg pulp simmer around 5 to 6 mins;
8) To serve, top the egg pulp with light soya sauce.
B. STEAM EGG WITH OYSTER BEAN CURD (TOFU)
Dish for 2 people, cooking time around 15 to 16 mins
MATERIALS:
3 to 4 eggs
Around 120 to 150ml of boiled cool water
Few oyster
1 box of steam bean curd (tofu)
Few salt, oil and sauce
STEP:
1) Prepare 3 to 4 eggs (unfreeze first);
2) Wash watts dish, then wipe off with dishcloth;
3) Stir eggs in the watts dish;
4) Stir after seasoning egg pulp with little salt. Marinating for at least 15 mins;
5) Cutting tofu in horizonlly split and put on watts dish;
6) After washed oyster, adding it with little salt and put it together with tofu on watts dish;
7) Simmer to boil water in the wok first. If using electric steamer, adjust firepower to 6 (total 10) to boil;
8) Simmer oyster and tofu for 7 to 8 mins;
9) If remaining water on watts dish after steamed oyster and tofu, adding the prepared egg pulp on watts dish to simmer again around 9 to 10 mins;
10) Before put the prepared egg pulp to steam, wipe off the inner of steamer and the underneath of cover;
11) Cover the wok, let the egg pulp simmer around 5 to 6 mins;
12) To serve, top the egg pulp with light soya sauce.

2 eggs
1 cup cooled chicken or fish stock
1 dash sake
1/2 teaspoon soy sauce
1/2 cup chopped cooked chicken breast meat
1 shiitake mushroom, sliced into strips
2 sprigs fresh parsley, for garnish
Directions
In a medium bowl, whisk eggs gently while slowly pouring in the chicken stock, sake, and soy sauce. Divide the mushroom and chicken evenly between two small tea cups. Pour the egg mixture into each cup until filled.
Bring about 1 inch of water to a boil in a steamer or saucepan. Reduce heat to a simmer, and place cups into the steamer. Cover, and steam for 12 minutes, or until egg is firm but soft and silky like tofu. Garnish each cup with a sprig of parsley, and serve.
