Refried beans
Can't believe I forgot to post this recipe. This is a big recipe to fill my crockpot for parties so adjust as needed. I also add cumin etc as I feel but here is the base....
10 slices bacon, diced for frying
2 yellow chili peppers (I love their flavor but can use any)
2 medium onions, chopped
4 garlic cloves, minced
4-30oz. Cans black and/or pinto beans
1-12oz. Can beer
In large pan fry bacon and remove, keeping the grease to sauté the onion, peppers and garlic until translucent.
Add beans (2 cans, rinsed and drained, 2 with their juice)
Bring to a boil, reduce heat and simmer for about 1 1/2 hours, adding beer as needed. Make sure beans do not dry out. Might need more beer.
Salt as needed, (if needed) before serving.

I'm thinking that we have about five beers too light on this recipe... Four for the cook, two for the crock? LOL!
