Easy Mexican Casserole
A super easy recipe that doesn't call for too many ingredients!!! I actually used canned Rotele & mixed it with salsa to make the 2 cups. It was spicy, but we really enjoyed it!!!
1 pound lean ground beef (or you could use turkey)
2 cups salsa
1 16oz can chili beans, drained
3 cups tortilla chips, crushed
2 cups sour cream
1 2oz can sliced black olives, drained
1/2 cup chopped green onions
1/2 cup chopped fresh tomatoes
2 cups shredded cheddar cheese
1. Preheat over to 350 degrees.
2. In a large skillet over medium-high heat, cook ground beef until no longer pink. Stir in salsa, reduce heat, and simmer 20 minutes, or until liquid is absorbed. Stir in beans, and heat through.
3. Spray a 9 x 13 baking dish w/cooking spray. Spread crushed tortilla chips in dish, and then spoon beef mixture over chips. Spread sour cream over beef, and sprinkle olives, green onion, and tomato over the sour cream. Top w/cheddar cheese.
4. Bake in pre-heated oven for 30 minutes, or until hot and bubbly.
I served mine w/a tossed salad. It was really yummy... Hope you enjoy it!!!

I love spicy food, I could live on tacos (almost)! I will try this one for sure!

Thanks guys!!! I'm not sure I put in on the right thread, Mexican or Casseroles?!! Kinda fits both...
