Roasted Santa Fe Grande Peppers
Whenever we go eat at what my hubby calls "the roach coach", which is basically where you find the most delicious Mexican food in Tucson.... they serve it up with a roasted yellow pepper. I would have never thought I would like to eat such a thing, but I absolutely LOVE them!
One of our favorite "Roach Coaches" (a cooking trailer parked on a vacant corner in town) is called El Nene, they have the BEST sonoran hot dogs.... I am hungry just thinking about it.

Since we had a gazillion peppers, one of them being Santa Fe Grande Peppers, we thought we would try to make some to go with our own food. How? Just by putting them on the grill and roasting them from raw, that was all we did! They tasted exactly the same as those delicious peppers served at El Nene!
I see many Santa Fe Grande roasted peppers in my future!
Here is ours with steak dinner and sweet potato.... yum!
And with ribs on the grill!
I know what a funny recipe, but so easy and tasty! Plus I was too busy canning and making hot sauce this month with all of our peppers to get too fancy! I finally made my last batch today!

That is so funny about the "Roach Coach" Lol... I so miss living in the city & having real ethnic foods!!! I love peppers too, those hot dogs & ribs look amazing. Dang it, I'm coming to visit... My brother got married in Scottsdale and we had the best food there. I just love Tex-Mex!!!

Looks great, Lisa! I think "simple" recipes are the BEST ones, and the tastiest. I love those "roach coaches"…very trendy nowadays and called "food trucks"! We have lots here in LA too.

That's looks very tasty Lisa, I don't think we have the yellow peppers here not hot ones any way we have just normal ones with no heat whatsoever

I find the ones in the store have no heat too. I think they lose their heat when plucked off the stem. If I store my peppers in the fridge for a week they are barely hot anymore, especially the jalepenos and yellow grandes.
