September Recipe Challenge Is In the House!!!
Welcome to our Monthly Recipe Challenge!
This month's recipe challenge is going to be:
Cooking with PEPPERS!!! -Whether it's chili peppers, sweet peppers, whatever kind of peppers...it's up to you!
Here is how the challenge works:
To enter the challenge, simply reply to this post with the recipe you plan on making. Once you make it, take a photo of your dish, post the recipe in the "Monthly Recipe Challenge" forum, and tell us about the recipe you chose. Did you love it or hate it? Did it need something different? Next time you make it would you change anything?
No matter how the dish turns out, we will have a lot of fun trying new ingredients, testing our pallettes, and exploring new cooking adventures together!
Each participant will receive the gorgeous new Magenta Ribbon Award to "Spice" up their user profile with!

I don't usually cook with peppers because I don't like them--and they don't like me. But when it comes to jalapeños, i absolutely love them! I am heading back to my Texas roots for this one. Bill and I used to go to a little bar in Texarkana, where we drank beer and I ate these or their seafood-stuffed peppers. These were my favorites.
Taco-stuffed Jalapeños
12 to 15 fresh jalapeños
1 pound of lean ground beef
1 package of taco seasoning
2 cups of shredded cheddar cheese
2 cups of tortilla chips, crushed
Salsa and sour cream for condiments
1. Slice and scrape seeds and membrane that hold the seeds.
2. Prepare the taco meat according to the directions on the packet and let cool slightly.
3. Add 1 1/2 cups of cheddar cheese to the meat mixture.
4. Stuff pepper halves with meat/cheese mixture.
5. Sprinkle peppers with crushed tortilla chips.
6. Cover peppers with remaining cheese.
Bake at 350 degrees for 25 minutes or until peppers are soft and cheese is fully melted and gooey.
Let them cool slightly before eating and serve with salsa and sour cream.Last edited by ChrisRN; 09-03-2013 at 04:23 PM.

I will have to think of something to make we call them chillies or capsicums here not peppers but they are the same thing only capsicums have no heat to them whatsoever.

JOHN WAYNE CASSEROLE
Ingredients
2 pounds ground beef, cooked and drained
1 (1.25-ounce) packet taco seasoning
4 ounces sour cream
4 ounces mayonnaise
8 ounces Cheddar cheese, shredded and divided
1 yellow onion, sliced
2 cups biscuit mix
2 tomatoes, sliced
1 green bell pepper, sliced
1 (4-ounce) can sliced jalapeno peppers
Directions
1. Heat oven to 325. Brown ground beef and add taco seasoning and water, according to packet instructions; set aside.
2. In a separate bowl, combine sour cream, mayonnaise, 4 ounces of cheddar cheese, and half of the onions; set aside.
3. Stir biscuit mix and water (directions on box) to form soft dough. Pat dough on the bottom and one-half-inch up the sides of an 9 x 13 in. greased casserole dish.
4. Saute remaining onions and bell peppers until slightly tender.
5. On top of biscuit mix, evenly distribute ingredients in the following order: ground beef, tomato slices, green peppers, onions, jalapeno peppers, sour cream mixture and end with remaining shredded cheese.
6. Bake for 30-40 minutes or until edges of dough are lightly browned.

I've been MIA for a few, but I love peppers!
Mild Jamaican Jerk Wings
These come out tender and juicy and so full of flavor! I get the aji dulce peppers in a Latin market. They are very small and thin skinned. I like the flavor because it is not as hot as even a jalapeno, but it is not sweet like a bell pepper. For this recipe, I used green aji dulce peppers, but I have seen them yellow to red in color. They really look like habanero. The original recipe did call for habanero, but I find them too hot. If you want regular, ordinary, run-of-the-mill Jerk wings use 1 to 3 habaneros by all means.
Ingredients- 1 bunch green onion, rough chopped
- 4 garlic cloves
- 2-inch piece peeled fresh ginger, rough chop or 1 teaspoon ground ginger
- 1 tablespoon fresh thyme leave
- 1 teaspoon ground allspice
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 2 teaspoons coarsely ground black pepper
- 3-6 mild aji dulce peppers (they look like habanero but they are not hot), stems and seeds removed or 1 -3 jalapeno chile peppers
- 2 tablespoons dark brown sugar
- 1/4 cup soy sauce
- 6 tablespoons fresh lime juice (about 4 limes)
- 1/2 cup vegetable oil
- 3 lbs chicken wing pieces (cut wings at the joints and discard or reserve for another use the tips)
Directions- Place all ingredients except oil and chicken in a blender or food processor and puree. With the processor running, slowly add a thin stream of oil until the mixture becomes thicker.
- Place chicken into the marinade and marinate for at least 2 hours or overnight in the refrigerator.
- Prepare the grill.
- Remove chicken from marinade and grill over direct heat just to brown. Watch closely as the sugar from the marinade will burn quickly. Move for indirect heat and cook until cooked through. Brush with additional marinade, if desired, during cooking.
- These can also be cooked on the stovetop (which is how I did it). I browned them over high heat in a lightly greased cast iron skillet. I slit one open and found it not quite done, so I put them in the microwave for 2 minutes.

Mmmm all of these recipes r sounding good! Ok, so I think I have decided what I will make.....
this one that Lisa posted in the yet to be tasted but I think I will use poblano peppers so hubby will approve and do it more Mexican style.
