    Welcome to our Monthly Recipe Challenge!

    November’s recipe challenge is going to be:

    Share one of your favorite Thanksgiving Day recipes!
    With the holiday only a month away, it will be fun to see what others love to cook for the big day, plus, it’s a chance for us to swap recipes and ideas with each other.


    Here is how the challenge works:

    To enter the challenge, simply reply to this post with the recipe you plan on making. Once you make it, take a photo of your dish, post the recipe in the "Monthly Recipe Challenge" forum, and tell us about the recipe you chose. Did you love it or hate it? Did it need something different? Next time you make it would you change anything?

    No matter how the dish turns out, we will have a lot of fun trying new ingredients, testing our palates, and exploring new cooking adventures together!

    I've found a couple recipes I'd like to try for this...

    My daughter will be learning pie-making, and I'm going to try some stuffed mushrooms and a brusselsprout recipe, too!

    I made my November Challenge Recipe this morning and I'm sort of sorry I did. Why, you might be asking? Mainly because it turned out so delicious that I'm afraid I'm going to spend the whole weekend eating the entire thing!!

    I made a Tres Leches Butternut Squash Bread Pudding, taken from Sunset Magazine. Oh my goodness…it is so sinfully good. I think you can eat this as a dessert, or serve this if you're having a Thanksgiving Day brunch, or even for breakfast. (The above photo is from Sunset Magazine).

    This recipe does entail several steps but it was pretty easy to put everything together. I roasted the squash instead of cooking it in the microwave oven; if you choose to do that simply place the squash on a cookie sheet, and put in a pre-heated oven at 375 degrees Farenheit for about 1 hour. This can be done ahead of time, and the Tres Leches sauce can also be made beforehand to save some time. Oh, I also added some dried orange flavored cranberries to the mixture to give it more of a holiday punch!

    Butternut Squash Bread Pudding (Sunset Magazine October 2008)
    Ingredients




    • 1 baguette (about 12 oz.)
    • 1 butternut squash (about 2 lbs.)
    • 3 cups half-and-half, divided
    • 1/2 cup granulated sugar
    • 1/4 teaspoon freshly grated nutmeg


    • 1/4 teaspoon Chinese five-spice powder
    • 5 large eggs
    • 1/2 cup firmly packed light brown sugar
    • Butter for pan








    Preparation



    1. Cut bread into 1-in. cubes and spread them on a baking sheet or clean counter. Let sit overnight.
    2. Preheat oven to 350°. With a fork or sharp knife, poke holes all over squash. Microwave it on high 10 minutes. Let sit until cool enough to handle. Halve squash lengthwise; scoop out and discard seeds. Flesh should be tender when scraped with a fork; if it isn't, microwave on high (cut side down) in 1-minute intervals until tender.
    3. Scrape flesh from 1 squash half into a blender. Whirl with 2 cups half-and-half, the granulated sugar, nutmeg, and five-spice powder until smooth. Add eggs and whirl just to combine.
    4. Put bread cubes in a large bowl and pour half the egg mixture over them. Stir remaining 1 cup half-and-half into remaining egg mixture and pour entire mixture over bread. Let sit 30 minutes.
    5. Meanwhile, scrape flesh from other squash half into a medium bowl. Add brown sugar and mash coarsely with a fork.
    6. Gently stir mashed squash into bread mixture. Butter a 9- by 13-in. pan and pour mixture into pan. Bake until set in the center, about 30 minutes. Serve warm, with Tres Leches Sauce.

    Tres Leches Sauce Recipe

    Ingredients:


    • 1 can (12 oz.) goat evaporated milk* (I used non-fat evaporated milk)
    • 6 tablespoons sugar
    • 1/8 teaspoon baking soda


    • 3/4 cup sweetened condensed milk
    • 1 cup heavy whipping cream


    Preparation:

    1. In a large saucepan, bring goat milk and sugar to a boil (mixture will boil up, so watch carefully). Meanwhile, in a small bowl or cup, dissolve baking soda in 2 tsp. water.
    2. Reduce heat to medium and stir in baking-soda water; mixture will boil up again. Reduce heat to maintain a steady simmer and cook mixture, stirring frequently, until light caramel–colored and reduced to 1/2 cup, about 30 minutes. Add sweetened condensed milk and cream and heat, stirring, until warm. Serve sauce with Butternut Squash Bread Pudding.
    *Evaporated goat milk (Meyenberg is a popular brand) is sold in most grocery stores. Look for it in the baking aisle, near the condensed milk.
    Make ahead: 1 week, covered and chilled (reheat gently before using).

    I'm going to make a sweet potato casserole but making it in thanksgiving. Noah wants to make meatballs of some sort so we may have two recipes this month or hell have to make his own acct

    Here is Noah's meatball recipe, he may be changing it up a little bit

    Honey Garlic Meatball Appetizers

    Ingredients

    2 lbs lean ground beef
    1 cup breadcrumbs
    3/4 cup milk
    1/2 cup onion ( finely chopped)
    2 eggs
    2 teaspoons salt
    1 tablespoon butter
    10 cloves garlic ( sliced thin)
    3/4 cup ketchup
    1/2 cup honey
    1/4 cup soy sauce

    Directions

    Preheat oven to 500 degrees.
    Mix meat, bread crumbs, milk, onion, eggs,& salt.
    Shape into 1” balls.
    (the smaller, the better).
    Place balls in a single layer on glass baking dish.
    Bake for 12 – 15 minutes and drain well and set aside.
    Melt butter in a saucepan and sauté garlic until tender.
    Add ketchup, honey,& soy sauce.
    Bring to a boil, reduce heat, cover and simmer for 5 minutes.
    Add meatballs to sauce and return to a boil& simmer uncovered for 10 minutes until sauce glazes meatballs.
    These freeze exceptionally well for future party appetizers.
    Just defrost and place in crockpot on low for 4 hours.

    3/4 KC Masterpiece Barbeque Sauce

    Directions

    Preheat oven to 500 degrees.
    Mix meat, bread crumbs, milk, onion, eggs,& salt.
    Shape into 1” balls.
    (the smaller, the better).
    Place balls in a single layer on glass baking dish.
    Bake for 12 – 15 minutes and drain well and set aside.
    Melt butter in a saucepan and sauté garlic until tender.
    Add ketchup, honey, Barbeque Sauce & soy sauce.
    Bring to a boil, reduce heat, cover and simmer for 5 minutes.
    Add meatballs to sauce and return to a boil& simmer uncovered for 10 minutes until sauce glazes meatballs.

    The original recipe did not have barbeque sauce and less honey but it just tasted like Ketchup. So I added more honey and the KC Materpiece made it perfect. It needed the additional sauce anyway, there was not nearly enough for all those meatballs.
