February 2014 Recipe Challenge: "Can" you take it?!
Welcome to our February Recipe Challenge!
Before I tell you what the February Challenge will be let me start off by asking, did you know that February is National Canned Food Month? Well, I sure didn't! Here are some interesting facts about canned foods, taken from the Academy of Nutrition and Dietetics:
Canned foods are nutritiously similar to their fresh counterparts. For example, canned tomatoes have as much, if not more, lycopene (the phytochemical that gives tomatoes its bright red color), than fresh tomatoes and are more easily absorbed than fresh.
Canned foods are portable, convenient, and quick! (but we all knew that already).
Canned foods have a long shelf life. The canning process (high temperatures and sterile containers) destroys organisms that would cause spoilage so canned food remains safe as long as the container remains intact.
Now that you have a little more knowledge about canned foods and how good they can be, let me tell you about this month's recipe challenge. The challenge will be to incorporate a canned food of your choice into a fabulous recipe!
So start searching your kitchen cupboards and let's get cooking!
Here is how the challenge works:
To enter the challenge, simply reply to this post with the recipe you plan on making. Once you make it, take a photo of your dish, post the recipe in the "Monthly Recipe Challenge" forum, and tell us about the recipe you chose. Did you love it or hate it? Did it need something different? Next time you make it would you change anything?
No matter how the dish turns out, we will have a lot of fun trying new ingredients, testing our palates, and exploring new cooking adventures together!

Tex-Mex Rice Bowl
1 8.8 oz pkg preformed brown rice (or make the equivalent)
8 oz ground beef
1/4 cup water
1 1/2 tablespoons taco seasoning
1/2 cup canned whole kernel corn, rinsed and drained
1 14 oz can black beans, rinsed and drained
Garnishes
1 cup pico de gallo
1 jalapeno pepper, minced
4 teaspoons chopped cilantro
Prepare rice according to package directions.
In a large skillet, brown meat over medium high heat until cooked through. Stir in water and taco seasoning. Reduce heat and let simmer until water nearly evaporates.
Stir in corn and beans. Stir in rice, then heat through.
Top with Pico de Gallo, minced jalapeno, and cilantro.
You could use salsa if you prefer.

Red Clam Sauce
So here are my canned ingredients:
This is a super easy, healthy alternative to your regular spaghetti sauce.
Ingredients:
1 15 oz can diced tomoatoes
1 8 oz can tomato sauce
1.5 teaspoons minced garlic
1 teaspoon garlic powder
1/8 tsp dried oregano
1/8 tsp dried basil
1 tsp sugar
1 6.5oz can of chopped clams
Directions:
Mix all the ingredients except for the clams in a medium sized pot, and stir until boiling. Cover pot and allow to simmer for about 45 minutes. During the last 5 minutes of the simmer, add the canned clams along with the clam juice and stir.
This makes about 4-6 generous servings of sauce and is delicious!
