    June's Fruity Recipe Challenge

    This month's recipe challenge will be to make a fruit-filled dessert. With summer almost here, how about making something scrumptuously refreshing with your favorite fruit? Whether it's a fruit tart, pie, a parfait...get as creative and fun with it! Looking forward to seeing everyone's entry!

    Here is how the challenge works:

    To enter the challenge, simply reply to this post with the recipe you plan on making. Once you make it, take a photo of your dish, post the recipe in the "Monthly Recipe Challenge" forum, and tell us about the recipe you chose. Did you love it or hate it? Did it need something different? Next time you make it would you change anything?

    No matter how the dish turns out, we will have a lot of fun trying new ingredients, testing our palates, and exploring new cooking adventures togethe

    I baked this lovely Apricot and Blackberry Cornmeal Kuchen this morning. In fact, I just took a bite of it as it was still slightly warm and wanted to get the full taste of it! And the verdict on the taste is...MMM....!!!

    If you're looking for a dessert or even a breakfast/brunch idea that is not too heavy and not too sweet and incorporates fruits of the summer, then this cake is for you.

    I found the recipe from a very old copy of Sunset's Low Fat Cooking...a book I've had for maybe 20 years now. Yesterday morning I visited the farmer's market in town and picked up the most luscious apricots. They're so sweet and delicious on their own of course, but I knew I wanted to use them in this month's challenge.

    Here's the recipe:

    Ingredients--
    1/2 Cup EACH AP flour and yellow corn meal
    1 and 1/2 tsp baking powder
    1 egg
    1/3 cup firmly packed brown sugar
    1/2 cup lowfat buttermilk
    2 tablespoons vegetable oil (I used melted coconut oil)
    5 medium sized fresh organic apricots, cut in half and pits removed
    10 organic blackberries
    2 tablespoons granulated sugar

    Directions-
    In a large bowl, stir together the flour, cornmeal, and baking powder, until well blended. Set aside.
    In a medium sized bowl, combine egg, brown sugar, buttermilk, and oil. Beat with a whisk until well blended. Add buttermilk mixture to cornmeal mixture and stir just until dry ingredients are evenly moistened.

    Spread battering in a greased 8-inch round baking pan or quiche pan. Gently press apricot halves, pitted sides up, into batter. Place a berry in hollow of each apricot half.

    Bake in a pre-heated 350 degree farenheit oven until center of cake feels firm when lightly touched (approx. 30-35 minutes). Sprinkle with granulated sugar. Let cool slightly, then cut into wedges and serve warm. Makes 8 generous servings.

    Hey cali baker!! If I would have been a good chef definitely I would accept your challenge. I have just started cooking very simple dishes. Well dear I am looking for best cooking videos that would help me to improve my cooking skills.
