Bacon ranch chicken skewers
I made this in the winter so I cooked bacon and then sautéed the cut up chicken in some of the bacon grease. VERY good!! The spice mixed with ranch is awesome!
1/3 cup ranch dressing
1 tsp. hot chili paste (sambal celek for example)
4 skinless, boneless chicken breast cut into 1 inch pieces
24 (1 inch) pieces red onion
12 slices thick cut bacon
salt and pepper to taste
12 (6inch) bamboo skewers, soaked in water for 2 hours
whisk together ranch and chili paste in large bowl.
mix in chicken pieces and toss to coat. Cover bowl with plastic wrap and marinate in the fridge for 1-3 hours.
preheat outdoor grill to med high and lightly oil grate.
remove chicken and pat dry with paper towels.
thread a piece of onion about 1 1/2 inches down the skewer.
thread the end piece of bacon onto skewer so the rest is hanging down.skewer a piece of chicken then fold the bacon back over, turn skewer so bacon that is left is hanging down again. Repeat process untilbacon is used up. (Using 4-5 pieces of chicken)
thread another piece of onion to hold the end of bacon on.
repeat with all the skewers, season with salt and pepper.
cook skewers on grill, turning every 3-4 minutes, until nicely browned on all sides and meat is cooked thru.(12-16 minutes per skewer)
serve with ranch as dipping sauce.

that's so cool that you mentioned "sambal celek"! that's an Indonesian chili paste that was a staple in my house growing up
