Purple Peppercorn Sauce
Purple Peppercorn Sauce
Ingredients:
Salt & Pepper (Optional, also whole peppercorns.)
Cream (Preferably Single Cream)
1 Onion
Bottle of Brandy
Bottle of Port
Beef Powder
Steps:
Finely chop the onion.
Add oil to pan
Add finely chopped onions
Turn on stove and keep it at mid temperature.
Saute onions for a minute, and then (if you have any) add whole black peppercorns. The amount desired is based on how peppery you want it to be.
Add 2 teaspoons of pepper
Add 1 teaspoon of salt.
Saute pepper, and onion for a minute.
Turn to low temperature.
Add 3/4 cup of brandy.
Add 3/4 cup of port.
Add 1 teaspoon of beef powder
Stirr a little bit
Turn off heat, and use an extra-long match to ignite the port and brandy mixture in the sauce pan. PLEASE USE EXTRA LONG MATCH OR EXTRA LONG LIGHTER. YOU HAVE RISK OF BURNING YOURSELF.
After fire has gone out, stir sauce.
Add 1 and 1/2 cup of cream.
Turn heat back on and set to low.
Stir sauce until dark purple color.
Turn off heat, and you are done!
