Summer Squash Dressing
I thought this would be either weird or interesting, but I loved it! It was sweet and savory at the same time. I really liked the flavor of the thyme.
Summer Squash Dressing
- 3 1/2 cups cornbread, cut into 1/2 inch cubes
- 1/2 cup chopped onion
- 1 1/2 pounds summer squash, cut into 1/4 inch slices
- 5 tablespoons melted butter (I used softened and it worked fine after mixing thoroughly)
- 3 tablespoons sour cream
- 1/3 cup chicken stock
- 1/4 teaspoon fresh ground black pepper
- 1/2 teaspoon dried thyme
- 14 teaspoon salt
- Preheat your oven to 400 degrees F; grease a 9- x 13-inch baking dish and set aside.
- In a large bowl, combine cornbread, onion, and squash.
- In a smaller bowl, stir together butter, sour cream, stock and season with pepper, thyme, and salt. Pour over cornbread mixture and gently stir to moisten and coat everthing.
- Transfer the whole she-bang into the prepared baking dish and bake, uncovered, about 45 to 50 minutes.

Wow, this one does sound very interesting. I like the fact that there aren't a lot of ingredients as many dressings can have. I personally love thyme myself!
