Heartland Vegetable Bake
Heartland Vegetable Bake
3 cups coarsely chopped red potatoes
2 tablespoons water
1 pkg frozen broccoli, cauliflower and carrot medley
1 small chopped onion
3 tablespoons butter divided
Preheat oven to 350 F.
Microwave potatoes, onion and water in covered medium casserole dish on high for 9minutes Drain return to dish stir in frozen veggies.
2 tablespoons all purpose flour
1 can Evaporated Milk
2 chicken flavored bullion cubes (or equivalent)
1/8 tsp ground white pepper
1/4 cup seasoned dry breadcrumbs
Melt 2 tablespoons butter in a saucepan over medium heat
stir in flour, cook, stirring constantly for 30 seconds.
Gradually stir in evaporated milk, bullion and pepper, cook stirring occasionally for 3 to 4 minutes or until bullion is dossolved and sauce is slightly thickened.
Pour sauce over vegetables.
Microwave remaining butter in a small bowl on high for 10 to 20 seconds. Stir in breadcrumbs until combined. Sprinkle over veggies. cover and bake 30 minutes or until top is golden brown.
**It's the sauce that is so good on this and I have used it with other vegetable combinations as well as those in the recipe above.Last edited by LariP; 01-19-2013 at 08:59 PM.
