Guy Fieri's Potatoes
I made these for a party and Oh my gosh they are the best! I made them and threw in a crock pot for better serving but actually you are supposed to just serve it when you make it, warm but not out of the oven or anything.
3 oz package dry crab boil
2 Tbsp kosher salt, plus more as needed
3 pounds red potatoes
1 Lb. thick cut bacon, diced
1 Cup diced red onion
1 Tbsp minced garlic
1/4 pound (1 stick) butter, at room temp.
1 Cup finely grated cheddar cheese (4 ounces)
1 green onion, chopped
1/2 tsp. cayenne
1/2 tsp. paprika
3/4 cup sour cream
freshly ground black pepper
Fill 6 qt. pot 2/3 full of water and add crab boil and 2 Tbsp. salt. Stir until blended. Cut potatoes in half, then into half-moon slices 1/4" thick. Add potatoes to the pot, bring to a boil and cook until fork tender. Drain and keep warm, covered in foil, in a low oven.
Meanwhile, in a med skillet over med heat, cook bacon until crispy; transfer with slotted spoon to paper towels and drain. Add red onion to the bacon grease and cook until lightly brown, 5-7 minutes. Just before the onion is done add in garlic and cook until lightly brown. Remove from heat.
In large bowl combine butter, 1/2 cup of cheese, half the bacon, half the green onion, the garlic onion mixture, cayenne, paprika, sour cream, and salt and pepper to taste. Mix thoroughly and enjoy.SO good!
