    Dirty Rice

This is for an 8x8 pan, however we always have to double it, it is very popular at our house. So the double recipe makes a 9x13.

    1 Cup uncooked rice
    1/4 C chopped onions
    1/2 stick Butter
    1 can Beef consomme

Saute rice and onions in butter until the rice has a nice coloring
slowly pour in the can of beef consomme and add a can of water
Bring to boil, pour into a casserole dish, bake 350 degrees for 35min to an hour, until the liquid is absorbed.

edit: when adding generic thumbnail pics I saw this suggestion of dirty rice in zucchini boats...I think it would be a fabulous idea to have this way. LariP
