Thread: Pocket Potatoes

1 small onion, thinly sliced
4 med potatoes, cut in bite-sized pieces
2 tbsp olive oil
1 tsp seasoned salt
1/2 tsp dill weed
1/4 tsp pepper
Pre-heat oven to 450 or grill to med-high. Spray sheet of aluminum foil with oil. Center onion on foil. Layer potatoes evenly on top of onion. Drizzle with oil. Sprinkle with seasonings.
Bring up sides of foil; double fold ends to form large pocket, leaving room for heat circulation inside pocket. Bake 30-35 min on cookie sheet or grill 15-20 min on covered grill.
(We've always grilled these. And you can change the recipe to put on the potatoes whatever you want - try different things you like. You can use the spritzer with olive oil to spray the foil - that is so they don't stick.)
