LIGHTER Mashed Potatoes
This isnt exactly a recipe but here goes. I lighten my potatoes up and nobody knows but me. I take a whole head of cauliflower (broken up) and maybe 3 russet potatoes (peeled and cubed) and boil them together along with some garlic cloves. Strain and add in whatever you like. I throw in a little butter, some milk and spices. (salt, pepper, garlic pepper, etc) Use my handheld blender to mash up and we are good to go.

Jen, great recipe! I bought a cauliflower head last weekend and didn't know what to do with it so was contemplating making a similar dish. I love knowing we can lighten up something as good as mashed potatoes. I decided to roast the cauliflower instead tho and will post the "recipe" too.
