Garlic Mashed Root Vegetables
Serves 6
Prep Time - 20 mins
Cook Time - 12 mins
2 medium potatoes, peeled and quartered
2 medium carrots, peeled and quartered
8 oz butternut squash, peeled and cut into chunks
1 medium rutabaga/swede peeled and cut into chunks
5 medium garlic cloves, peeled
1/8 teaspoon salt
1/4 cup fat free sour cream
1/8 teaspoon black pepper, or to taste
1/8 teaspoon salt, or to taste
Place potatoes, carrots, squash, rutabaga(swede) and garlic into a saucepan and cove with water, add salt, cover and bring to a boil. Reduce heat and simmer until vegs are tender, about 10/12 minutes.
Drain vegs and mash in pan using potato masher or back of a wooden spoon. Stir in sour cream and season to taste with salt and pepper. Serve
Note:- If you find the mash a little dry, you can add fat-free chicken broth. I have never found it to be necessary!!Last edited by kazzy220; 01-06-2013 at 12:32 PM.
