    Green Bean Masala




    Side dishes are a great place to try out unfamiliar spices and flavors. This is a taste of Indian flavors. You can either use garam masala or a red curry powder. I like the red curry powder because it is nothing like regular curry powder, but can still be sprinkled on anything. I use it on everything (do not tell my husband!)

    Green Bean Masala
    Ingredients:


    • 1 pound green beans, ends trimmed and strings removed
    • 2 tablespoons butter
    • 1/2 teaspoon red curry powder
    • 1/2 teaspoon salt
    • 1 chopped tomato


    Instructions:

    Bring a pot of salted water to a boil and prepare an ice water bath by filling a bowl with cold water with ice.

    Cook green beans just until tender, about 10 minutes, then drop them in the ice water bath to stop the cooking and preserve the bright green color. Drain.

    Melt the butter in a skillet, over medium heat, until it starts to sizzle and brown. Stir in the red curry and salt. Add the green beans and toss to coat.

    Serve with the chopped tomato scattered on top.
