Fried Green Beans with Coconut
This is another Indian side dish.
Fried Green Beans with CoconutIngredients:
- 4 tablespoons unsalted butter
- 1 teaspoon black mustard seeds
- 1/2 cup onions, chopped
- 1 teaspoon fresh gingerroot, peeled and minced
- 1 teaspoon salt
- 1/2 teaspoon fresh ground black pepper 1 pound fresh green beans, ends trimmed and cut crosswise into small pieces
- 1/4 teaspoon cayenne pepper or 1/4 teaspoon red curry powder
- 1/4 cup unsweetened shredded coconut
- 2 tablespoons fresh cilantro, chopped
- 2 tablespoons lemon juice
Instructions:
In a skillet, heat butter over medium heat, add mustard seeds and stir fry about 30 seconds.
Stir in the onion, ginger, salt and pepper; cook, while stirring, about 5 minutes.
Stir in the green beans and sprinkle with the cayenne; stir fry for another 5 minutes.
Stir in the coconut and cilantro, reduce heat to low, cover, and cook until the beans are crisp tender, about 5 to 8 minutes, stirring occasionally.
Remove from heat and sprinkle with the lemon juice.

Bruce thinks Coconut is a form of poison, so this is a recipe that no matter how good I think it looks will never be made in this household.

My husband is not keen for coconut either. With just the two of us (besides the ladies) I often make stuff just for myself. The ladies do have a taste for curry, ha ha ha!

He would seriously think the pan was destroyed if I toasted coconut in it. LOL
We have a joke that I tried to poison him on our wedding night. We had been gifted a nights stay in Hot Tub Suite with a honeymoon package at a local motel by my boss as a wedding present. Part of the honeymoon package was small heart shaped chocolates on the bed nightstands with 4 different types of candy in them. So we were lying on the bed and I opened one. One of the pieces of candy looked like a peanut butter cup and he likes those better than I do, so I fed it to him. He bit into it then jumped out of bed like he'd been shot and ran to the bathroom sputtering and shouting "It's poison! It's poison!" and then spit it out in the toilet and brushed his teeth. It really was rather hilarious.

That is funny. I am so evil I actually want to change my avatar on EBN to a scary, widdle cartoon coconut and stalk your husband. Good thing I am too mature for that!
