Greek cucumber salad
I made this last week and it turned out very good. I have to say I just used my good seasonings Italian dressing, made with red wine vinegar on this. Warning, do not slice so thin. Got soggy quick so I think more chunks of cucumbers would maybe be better next time.
2 cucumbers (seeded then diced or sliced)
3 ripe roma tomatoes, chopped (I used grape tomatoes, sliced in half)
1/3 cup sun-dried tomatoes packed in oil (diced and reserve 2 tablespoons of the oil) (not a fan so I used roasted red peppers)
Artichoke hearts, jarred, quartered (use any amount desired)
1 small red onion, thinly sliced
1 cup kalamata olives
1 1/2 cups feta cheese, crumbled
3 to 4 tablespoons extra virgin olive oil (mixed with red wine vingar to taste)
Salt & freshly ground black pepper, to taste, lots black pepper!
Dried oregano ( optional and to taste)
*In a large bowl toss together cucumbers, Roma tomatoes, diced sun-dried tomatoes, 2 tablespoons of the sun-dried tomato oil, artichokes, and the red onion and olives; toss to combine.
*In a small bowl whisk together the olive oil with a small amount of red wine vinegar (or to taste) drizzle over the salad. Season with salt and lots fresh ground black pepper to taste.
*Chill salad at least 1 hour.
*Just before serving sprinkle the feta cheese on top of the salad, then prinkle a small amount of dried oregano on top of the feta if desired.

That looks marvelous! I have a cuke I need to use, this might just be the ticket. Sometimes we get tired of lettuce since we eat salad almost every day.
